About

This practical, hands-on cookery class explores the fundamentals of coastal South Indian cuisine, with a focus on seafood. In this class, we teach you how to cook seafood according to time-honoured techniques from coastal South India. The dishes we’ve chosen to exemplify these techniques are grilled mullet marinated in traditional spices, served with tangy red onion chutney; king prawn moilee with stir-fried cabbage Thoran; and tamarind-spiced rice.

You’ll learn the fundamentals of a South Indian curry, the art of tempering spices (‘tadka’), how to cook with coconut, and a foolproof method for cooking rice, to name just a few examples. These skills will enrich all your home cooking, and build your confidence in the kitchen. Think this class would make a perfect gift?
